The most delicious vegan recipe for lighter bites made from broccoli rabe and kale
I made a delicious, healthy new vegan recipe the other day with farm fresh ingredients. It can be lunch, which is how I enjoyed it, or as a side for dinner.

Ingredients for Kale and Broccoli Rabe Stir-Fry:
3 TBSP Extra Virgin Olive Oil
2 pinches, kosher salt
2 tops, garlic scapes
1 bunch flat kale, chopped
1 large handful of broccoli rabe, then chopped
1/2 c golden raisins
6 sun dried tomato halves, dry packed ~ no oil
In a large sautee pan, heat your oil and toss in the tops of your garlic scapes, finely chopped, to cook, just as you would brown 2 cloves of garlic. (In fact, if you can’t find garlic scapes, pictured here, the garlic is a perfect substitution.)
Once the smell of the garlic intensifies, add the chopped kale and broccoli rabe and sautee until leaves are well coated and starting to wilt.
Sprinkle 2 pinches of kosher salt and add the golden raisins and chopped sundried tomato.
Sautee for an additional two minutes and remove from heat. Serve immediately or refrigerate once cool and eat within 3 days.
